Cashew Chipotle Sauce
I love having this sauce on hand in the fridge. It’s incredible for taco night! We also like to spread it on a sandwich, drizzle it on a salad or bowl, and even just dip some chips into it. Enjoy!

Instructions
- Using either an immersion blender or a high speed blender, blend all ingredients until smooth.
- Transfer to a container and use within one week.
Notes
I love having chipotle cubes on hand for sauces like these. I simply divide one can of chipotle peppers with the adobo sauce into a silicone ice tray and freeze. Then remove the cubes and transfer to a freezer bag to keep on hand. When ready to use, simply thaw one cube.
