- Carefully slice the onions to your desired thickness. I prefer very thin so I typically use a mandolin on the thinnest setting
- Place sliced onions into mason jar, lightly breaking them apart. Fill the mason jar leaving about an inch to the top of free space
- Add equal parts of apple cider vinegar and water (a 1:.5 ratio).
- Add maple syrup
- Tighten lid on the mason jar and give it a good shake
- Place in fridge for 30 minutes before consuming
